Days 1-3: Tbilisi, Mtskheta

In Tbilisi, the splendid capital where your journey begins, draw your chair up to a supra, or “Georgian Table,” a leisurely feast featuring dozens of dishes and a toastmaster (tamada) to lead the countless toasts. Connect with Georgia's past at UNESCO-listed Mtskheta, early capital of the kingdom of Iberia.

Days 4-6: Kutaisi, Svaneti

Drive to Kutaisi through a region of small farms, vineyards, fields, villages and orchards, pausing at Katskhis Sveti, a tall limestone pillar where medieval hermit monks perched. Delight in a dinner of the complex Imeretian cuisine. Explore UNESCO-listed Gelati Monastery, adorned with striking frescoes and mosaics. Drive through the steep and stunning Caucasus Mountains to the secluded Svaneti region, known for its brawny UNESCO-listed medieval watchtowers. Enter a Svanetian home for a gourmet lunch; specialities could be hen roasted in rose petals, eggplant slices rolled around garlic-walnut paste, and khachapuri stuffed with herbs. Enjoy a stirring polyphonic performance by local Svan singers.

Days 7-8: Vardzia, Tbilisi

Descend from the heights to Zugdidi, sampling spicy Megrelian cuisine, and overnighting at a perfectly located resort in the valley below 12th century Vardzia cave monastery. Explore the caves, then sample hand-made cheeses and chocolates at tiny Phoka Nunnery before returning to Tbilisi.

Days 9-12: Telavi, Signagi, Tbilisi

Discover Georgia’s wine country, Kakheti, visiting the workshop of a ceramicist who demonstrates the ancient Georgian art of making qvevri, the huge earthenware vessels used for making Georgian wines. Near Signagi, take a walking tour of the vineyards at renowned Pheasant’s Tears Winery, producing organic wines from regional grapes. Visit Bodbe Monastery, meet a local silk producer and attend a dance class where local musicians and dancers bring to life the spirited traditions of the Caucasus.
